Tricolour Icing:
  1. Beat the icing sugar, butter and vanilla essence together until light and fluffy. 
  2. Divide mixture into 3 and colour red, green and yellow. 
  3. Spoon coloured icing into piping bags fitted with plain nozzles.
  4. Pipe all three colours alternately onto each cupcake. 
  5. Decorate with hundreds and thousands.

Makes 1,5 kg icing

Tricolour Icing:

1 kg packet icing sugar
500 g (2 cups) butter
15 ml (1 tbs) Moir’s Vanilla Essence
Moir’s Pink, Green and Yellow Food Colouring
