Method

Preheat the oven to 180ºC.

For the crust, add the melted butter to the crushed biscuits and mix well.

Press the mixture into the bottom and sides of an oven proof dish.

For the filling, heat the oil and fry the onions until soft and translucent and set aside.

Beat the eggs, milk, cayenne pepper and Bovril or Marmite together.

Sprinkle the cheeses and asparagus cuts over the pastry shell.

Top with the onions and pour the egg mixture over.

Bake for 30-40 minutes until set. In the meantime fry the green asparagus spears for 3 minutes in the 15ml heated olive oil.

Spoon the hot asparagus over the baked tart when it comes out of the oven. Serve.

Crust

1x100g Yum salted biscuits, coarsely crushed

100g butter, melted

Filling

30ml olive oil

3 onions, chopped

3 eggs

250ml milk

1ml cayenne pepper

2,5ml Bovril or Marmite

100g grated Cheddar cheese

100g grated Mozarella cheese

1x450g can asparagus cuts, drained

1 punnet fresh green asparagus

15ml olive oil (extra)
