Method

Preheat the oven to 180ºC.

Grease a 12 cup muffin pan and place 8-10 biscuits in each cavity.

Heat the oil and fry the onion until golden brown and translucent.

Add the chopped red pepper and fry together for another minute.

Mix in the ham. Remove pan from heat.

Mix chopped parsley, mayonnaise, milk, beaten eggs, and cheese together.

Add the onion, pepper and ham mixture to the mayonnaise mixture and mix well.

Spoon filling into muffin pans, on top of the Smackers.

Bake for 20-25 minutes. Remove from oven and leave to cool slightly.

Serve hot or store in fridge until required.

Makes 12 tartlets

Crust

8-10 Moir’s Cheese Flavour Smackers

Filling

30ml oil

1 onion, finely chopped

1 red pepper, deseeded and chopped

350g ham, chopped

10ml parsley, chopped

187ml mayonnaise

125ml milk

2 extra-large eggs, beaten

187ml grated Cheddar or Gouda cheese
